The Mallard is the farm specialties and it brings customers from many cities of Italy. We breed mallards in our farm under the vines respecting the natural biological cycle. We fed them with corn, bran and barley and they take more than six month to grow. We cook them on a spit in a wood oven for about 4 hours and serve them with grilled polenta.
Other farm specialties are: roasted guinea fowl, grilled chicken, rabbit cooked on a spit or in a wood oven and they are all cooked on fireplace or wood oven using old traditional recipes.
